viola tonda
Viola Tonda, whose label is inspired by the chromatic range of the fruit that fades from the tender beige of the pulp to the brightest pink, up to the intense purple during the veraison of the olive, is extracted from the native Buža variety.
The aroma has a green and fresh fruitiness of medium intensity, with hints of almond, apple, banana and a slight reminiscence of flowers. The initial sweet flavour is immediately followed by the harmonious combination of bitter and spicy, never aggressive, but enveloping and persistent. Elegant and round flavours remain, with almond notes balanced between medicinal herbs, pepper and thistle.
Unexpected and singular, with an authoritative and delicate aromatic set at the same time. Its fresh, though daring, notes are lightly combined with any gourmand preparation and narrate the essence of the territory.
