sun
facing south-west, the olive groves enjoy the sun’s rays from dawn to dusk, with limited rainfall throughout the year: perfect conditions for the development and ripening of a typically Mediterranean crop
sea
the effect of the Adriatic Sea, only a few hundred metres away, guarantees a mild climate even during the winter and the salt, carried by the sea breeze, enriches the oil with scents that come from afar
soil
the Istrian red soil, rich in chalk, clay, calcium and iron, offers the olive groves the right alternation between the fertile and the poorer layers, which is particularly valuable in dry summers
wind
the gusts from the Bora wind and the breeze that blows at intervals from the land and from the sea guarantee constant ventilation, creating an optimal microclimate for the balanced development of the plants
In this typically Mediterranean context, Istria is one of the northernmost areas particularly suited to the cultivation of olive trees. An extreme, yet privileged geographical position which, during the phase of accumulation of oil in the olive allows the processing of fine elements such as oleic acid in high percentages (75%), higher than in other Mediterranean areas, thus lending added value to the product that cannot be achieved elsewhere.
